Livarot mixed_cheese ProscuittoOne of Normandy's oldest and boldest cheeses nicknamed "the Colonel" for the five bands of dried reed wrapped around its circumference, which hold its shape during ageing. Beneath the deep amber, washed rind lies a supple, creamy paste with a strong, assertive aroma and a full flavoured, meaty character with earthy, spicy depth.
